The large portion of gobbling goodness cost only $7 and dessert, a variety of cakes and rolls was an additional $1. Phil isn’t just a resident who enjoys cooking. He and his wife Terry are from just outside Kansas City and Phil has a history inside and out of a kitchen, having not only owned a restaurant in the suburbs of Chicago – an Irish bar and grill named Mickey Finn’s, but also owning a campground in Missouri with a full commercial kitchen. Oh, and he’s Sicilian – so the Italian that he makes, which includes a lasagna coming up during the next few weeks, is definitely legit. “We try to have something different each week,” Phil said. “Sometimes things repeat but for the most part we try to mix it up a lot.” A few people had gathered inside the park’s activity hall a few minutes before the scheduled opening. About 40 people attended, mostly from the home park but others came sniffing around and were prepared with their own plates, forks and knives and set up “camp” before the meal was served. They prepared their drinks, sat at some of the tables and like in the traditional family setting, started conversations with one another, enjoying the day and ready for the moment Phil said, “It’s dinnertime.” Later in the week, Phil was gonna pull out some frozen broth from the Christmas meal – which served about 100 people and included turkeys cooked three ways, hams and more – and make a turkey noodle soup along with some black-eyed peas, something that one won’t find across the Valley during other parks’ meals. “We do the dinners on Thursdays and lunch on Saturdays,” he said. “We started with breakfast, but it was slow, so we went to lunch. COVID has played it differently on how many want to come to other parks. But people enjoy it and still we get a few from elsewhere.” The crowd, and the conversations, grew. Laughter filled the building as people enjoyed what Sicilian Phil and his small crew of helpers had whipped up. It was just like dinnertime at home. DINNER From pg. 1
