No doubt at one time or another during your life you have wondered about your heritage. Where did your parents or grandparents come from? Did they come from Europe? From Mexico? From South America or from Canada? Or were they Native American? If we look far enough back on our heritage, we will probably find that somewhere back in past generations we had relatives who were immigrants. Immigration just seems to be a natural process as people look for a better life, a safer environment or a better paying job. Migration and immigration have no doubt existed from the beginning of time. On our own continent immigration originally was from the North to the South with the immigrants looking for better conditions to raise their crops. During the 1800’s many persons in the United States were moving from the East to the West with many lured by the offer of free land or gold. Others were looking for adventure. Today those of us who live in the United States just call ourselves a mobile society. As people migrate from one place to another, they bring with them new foods, new plants, different animals, and customs and sometimes a different language. They sometimes even introduce new diseases. When the Spaniards arrived in New Spain or what we know as Mexico they introduced horses and cattle. In turn they found tomatoes, com, squash, and beans as well as nutmeg and other spices. Later, when the Mexican people began to migrate into what is now the United States, they brought tortillas and tamales and empanadas - an empanada is a fruit filled baked pie similar to our southern fried pie. The cattle and horses that came with these immigrants brought the mesquite bean in their bellies and now we have the mesquite tree all over Texas and it seems to be spreading to the North. But who introduced us to Barbeque, the American hot dog and apple pie? Food for thought, right? If you begin to research these questions, you may find different answers. Barbeque may have originated in the Caribbean, or it could have come from the vaqueros (cowboys) of South America and Mexico or maybe even from the camp cooks who worked on the cattle drives from Texas to Kansas. The hotdog? Germany would like to take credit but so would New York where sausages were sold on the street. Since eating a sausage with your bare hands was greasy and messy, a bun was wrapped around the sausage and there you have it - the hot dog. Why not do a little research on your favorite food? You may find that many of the foods and dishes of the Southern states came with the African slaves when they were brought into the United States. Turnip greens? Com bread? Black eyed peas?
