It’s time to travel

20221228 St Cyril and Methodius webI hope you stayed warm, cozy and safe for your Christmas celebrations and that you were able to visit with your family and special friends either by phone or in person. And now what do you do with the leftovers? Even before Christmas, I had made a huge pot of turkey and corn soup from the leftover Thanksgiving turkey. Easy as pie and so, so good on those cold days. Just add the chopped up leftover turkey to a can of celery soup, a can of whole kernel corn, a can of cream corn and a can of water. And if you had any turkey drippings, add them in and bring all to a boil and then simmer.

Now I have always liked to add a little something extra to the soup recipe so add I did – chopped onions and chopped jalapenos to taste. I guess I have lived in the Rio Grande Valley long enough to develop a taste for that special bite offered by chili peppers. And of course, taste the soup to add just the right amount of salt and pepper to your liking. This might be a good time to try white pepper if you haven’t tried it before. White pepper has a little different taste than black pepper. Besides, the white pepper doesn’t leave black specks in the soup. Try it. I think you will like it.

The Go … With Jo! Office has been very busy this Christmas season … First of all, I was blessed to be able to once again go with my group to the Hidalgo Festival of Lights and listen to that talented boys’ choir from Mexico, the Estudiantine Guadalupana. One of the passengers called early the next morning after attending this special Christmas presentation for the first time. She wanted to be sure that her name was on the list for next year. This group is so very, very talented. If you haven’t heard them before, you might want to mark your calendar for next year.

And then, of course, it is certainly time to get all those contacts in place for upcoming trips in 2023. There will be a few new tours along with the all-time favorites such as the San Antonio Rodeo, Magnolia Markets, Painted Churches, Big Bend, San Miguel de Allende, Copper Canyon, and Monarch Butterfly. So, stay tuned and watch for the ads in the local papers or check our calendar on our website. It takes some time to get all the contracts in place, so check back from time to time to see what has been added. Or call the office if you have a question.

But now it is time to get ready for the New Year. May 2023 be a healthy, happy year for all of us. I hope to see you on one of my tours. It is time to travel again. If you have a special request, give me a call and if possible, we will add your suggestion to our selection.
